Pineapple with Watermelon Salsa

Ingredients
- 1 recipe Vanilla Syrup (recipe below)
- 1 cup chopped, seeded watermelon
- 1/2 cup seedless red grapes, cut into quarters
- 4 teaspoons snipped fresh basil
- 4 teaspoons snipped fresh mint
- 1 tablespoon saba or balsamic vinegar
- 1 medium fresh pineapple, cored and peeled, if desired, and cut crosswise into 3/4- to 1-inch thick slices
- Fresh basil and mint sprigs (optional)
Directions
1. Prepare and chill Vanilla syrup.
2. For salsa:In a medium bowl, combine watermelon, grapes, chilled Vanilla Syrup, basil, mint, and saba. Cover and chill for 30 minutes.
3. For a charcoal grill, grill pineapple slices on the rack of an uncovered grill directly over medium coals for 6 to 8 minutes or until pineapple is heated through, turning once halfway through grilling. (For a gas grill, preheat grill. Reduce to medium heat. Place pineapple on grill rack over heat. Cover; grill as above).
4. To serve, cut pineapple slices into quarters and arrange on plates. Use a slotted spoon to ladle watermelon salsa over the grilled pineapple. If you like, garnish with sprigs of basil and mint. Makes 4 servings.

Ingredients
- 1/4 vanilla bean
- 1/4 cup water
- 1/4 cup sugar
- 1/4 teaspoon vanilla
Directions
Scrape seeds from vanilla bean, if using. In a small saucepan, combine water, sugar and vanilla seeds. Bring to boiling; remove from heat. Stir in vanilla, if using; cool. Cover and chill for at least 30 minutes. Makes 1/3 cup.
