Pineapple with Watermelon Salsa

seedless red grapes, cut into quarters

saba or balsamic vinegar

fresh pineapple, cored and peeled, if desired, and cut crosswise into 3/4- to 1-inch thick slices

Fresh basil and mint sprigs (optional)
Directions
- Prepare and chill Vanilla syrup.
- For salsa: In a medium bowl, combine watermelon, grapes, chilled Vanilla Syrup, basil, mint, and saba. Cover and chill for 30 minutes.
- For a charcoal grill, grill pineapple slices on the rack of an uncovered grill directly over medium coals for 6 to 8 minutes or until pineapple is heated through, turning once halfway through grilling. (For a gas grill, preheat grill. Reduce to medium heat. Place pineapple on grill rack over heat. Cover; grill as above).
- To serve, cut pineapple slices into quarters and arrange on plates. Use a slotted spoon to ladle watermelon salsa over the grilled pineapple. If you like, garnish with sprigs of basil and mint. Makes 4 servings.
Vanilla Syrup
Ingredients

vanilla bean
- 1/4
cup
water
- 1/4
cup
sugar
- 1/4
teaspoon
vanilla
Directions
- Scrape seeds from vanilla bean, if using. In a small saucepan, combine water, sugar and vanilla seeds. Bring to boiling; remove from heat. Stir in vanilla, if using; cool. Cover and chill for at least 30 minutes. Makes 1/3 cup.
