Once you have the method of making an agua fresca down, you can improvise with almost any soft fruit. Be sure to use fresh lime juice; it adds the perfect zing. Also, temperature makes a big difference in how an agua fresca tastes, so if time permits, chill it before serving it over ice.

Ingredients

  • 1 6 - 8 - pound seedless watermelon or 2 medium cataloupe (13 cups)
  • 2 cups cold water
  • 2 tablespoons lime juice
  • 2 tablespoons honey or sugar
  • Ice cubes

Directions

  1. Cut the rind from the whole watermelon; discard rind. Cut the flesh into 2-inch cubes.
  2. In a blender combine about one-third of the watermelon cubes and 2/3 cup water. Cover and blend until smooth. Strain through a fine-mesh sieve into a large pitcher or large glass jar. Discard solids. Repeat twice, using remaining watermelon and remaining water.
  3. Stir lime juice and the 2 tablespoons honey into strained watermelon mixture. Serve in ice-filled glasses.

Variation

  • Pineapple Agua Fresca Prepare as directed, using 4 cups cubed, peeled fresh pineapple; 6 cups cold water; 1/2 cup lime juice; and 1/3 cup honey or sugar.
