The Czech in the name is a nod to Pesek's Czechoslovakian heritage, but it's hard to find anything evil about this place. First there's the beer. They currently offer six brews nightly; all brewed on-site. A flight of all six is just $5. Evil Czech has up to eight beers on tap nightly, plus six experimental brews. They also offer a house-brewed root beer and an orange cream soda for kids. The American Wheat is the best-seller, but other satisfying and imaginative options include the 7 AM, which features hints of oatmeal and cream. 

The food is another highlight. Most ingredients come from local or organic farms, Amish farmers markets and their own American Bison Ranch. Don't be shy about ordering the Bohemian, a grilled house-made bison bologna. This is not the bologna sandwich from your youth, but rather a tasty (and healthy) upgrade that looks more like a hearty bratwurst, topped with caramelized onions and a side of crispy house-made chips. Pizzas include both carnivore and herbivore options. Beware the cheeky names here: the John the One-Eyed pizza is a delicious choice, topped with sundried tomato pesto, roasted garlic, assorted salami, goat cheese and cherry peppers.

Evil Czech is owned and run by people passionate about beer, food and hospitality. Be sure to ask about their mug club and peek at the brewing operation through the window beside the bar. A gracious wood paneled dining room welcomes kids, but you have to be 21 to go in the bar.
