If you think vegetarian cuisine -- much less vegan food -- is strictly for rabbits, you'll be surprised by the tasty, hearty wraps and other dishes at this cart with a conscience.
Baked tofu sandwich might not be high on your list of favorite lunch options, but that's probably just because you haven't swung by the Dandelion. The unassuming green and brown food cart,-which is usually parked on the Library Mall at UWMadison, near the west end of State Street, or on the Capitol Square during the summer's Saturday farmers markets, specializes in vegetarian items. But these are savory, rich dishes making good use of a wide variety of produce, from collard greens to poblano peppers. In short, if you're the sort of person who hears "vegetarian" and worries about pecking at a flimsy salad that won't fill you up, you needn't be concerned at the Dandelion. The aforementioned baked tofu sandwich is a veritable giant. Same goes for wraps like the Rio, a vegan burrito with creamy goodness from mouthwatering artichoke dip. And if you can force yourself to stop enjoying the plentiful portions (it's not easy), you're sure to have leftovers. After all that healthy eating, you'll want to reward yourself, so snag one of the cart's peanut butter cups as a treat. Homemade by owners Braulio and Tara Maximiliano, the candies make Reese's look like featherweights. They're better for you too, of course.
