Spinach-Pasta Salad with Shrimp
- Makes: 6 servings

shell pasta or elbow macaroni
fresh or frozen cooked shrimp, thawed
chopped red sweet pepper
bottled creamy onion or Caesar salad dressing
snipped fresh dill (optional)
Salt and freshly ground black pepper
goat cheese, sliced, or feta cheese, crumbled
Cook pasta according to package directions; drain.
In an extra-large bowl combine cooked pasta, shrimp, and sweet pepper. Drizzle with the salad dressing. If desired, sprinkle with dill. Toss to coat. Season to taste with salt and pepper.
Divide spinach among six shallow bowls or plates. Top with shrimp mixture and cheese. Makes 6 servings.
