Champagne and Brandied Fruit
- Makes: 12 servings
6 hrs to 8 hrs
fresh or frozen unsweetened whole strawberries
fresh or frozen unsweetened peeled peach slices
fresh pineapple chunks
brandy, rum, unsweetened pineaple juice or orange juice
bottle brut champagne, sparkling wine, sparkling apple cider, sparkling white grape juice, or 4 cups unsweetened pineapple juice, chilled
In a large bowl, combine whole strawberries, peach slices and pineapple chunks. Sweeten fruit with a little sugar, if you like. Add brandy. Cover and refrigerate the mixture for 6 to 8 hours.
Fill champagne or other saucer-shaped glasses half-full with fruit mixture. Just before serving, pour chilled champagne over the fruit and fill almost to the top. Gently stir. Makes 12 (4-ounce) servings.
