Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup butter
  • 1 slightly beaten egg
  • 6 tablespoons sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 pounds tart cooking apples, peeled, cored and thinly sliced (5-1/2 cups)
  • Vanilla ice cream (optional)

Directions

  1. In a mixing bowl, combine the 2 cups flour, the 1/2 cup sugar, the baking powder, and salt.
  2. Cut in butter until mixture resembles coarse crumbs. Stir in egg. Press half the mixture into an 11x7x1-1/2-inch or 9x9x2-inch baking pan.
  3. Stir together the 6 tablespoons sugar, 2 tablespoons flour, and cinnamon. Toss lightly with apples to combine. Layer the apple mixture evenly atop the crust. Sprinkle with the remaining flour mixture.
  4. Bake in a 350 degree F oven for 45 to 50 minutes or until lightly golden. Serve the bars warm with ice cream, if you like. Makes 15 bars.
