Cornmeal Biscuits

Ingredients

  • 1/2 teaspoon dried basil, crushed
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornmeal
  • 2 teaspoons baking powder
  • 1/2 cup butter
  • 2 tablespoons snipped fresh parsley
  • 2/3 cup milk

Directions

  1. In a large bowl, stir together flour, cornmeal, baking powder, and basil. Cut in butter until mixture resembles coarse crumbs. Stir in parsley. Make a well in center. Add milk all at once. Stir until dough just clings together.
  2. Turn the dough out onto a lightly floured surface. Knead the dough gently for 10 to 12 strokes.
  3. Roll or pat dough to 1/2-inch thickness. Cut with a 2-1/2-inch biscuit cutter, dipping cutter into flour between cuts. Place biscuits on a baking sheet.
  4. Bake in a 450 degree F oven for 10 to 12 minutes or until golden. Serve warm. Makes 10 biscuits.
