Ingredients

  • 1/3 cup thinly sliced carrots
  • 1/4 cup chopped onion
  • 2 tablespoons butter
  • 2 cups mashed potatoes
  • 1 1/2 cups milk

Directions

  1. In a saucepan, cook carrots and onion in butter for 6 minutes.
  2. Stir in the potatoes. Slowly stir in enough milk for a medium-thick soup.
  3. Add some salt and pepper; heat. Makes 4 to 6 side-dish servings.
