Easy-Does-It Sweet Potatoes
- Makes: 4 to 6 servings
- Start to Finish
sweet potatoes (1 pound)
butter or margarine
chopped pancetta or ham
finely chopped shallots or onion
snipped fresh parsley
Peel the sweet potatoes and thinly slice (you'll have about 3 cups).
In a large skillet, melt butter or margarine. Add potatoes, pancetta or ham, shallots, and parsley. Sprinkle with pepper.
Cook, uncovered, over medium heat for 8 to 10 minutes or until the potatoes are tender and beginning to brown, stirring gently occasionally. Makes 4 to 6 side-dish servings.
