Midwest Curried Soup Menu

In this delicious meatless main dish, curry powder and fresh ginger add a spicy base to lentils and sweet potatoes.

Midwesterners know the three major signs of fall: the chilling of temperatures, the bursting of leaves into scarlet and gold displays, and soup. Yes, soup.

In this delicious meatless main dish, curry powder and fresh ginger add a spicy base to lentils and sweet potatoes. Top with a dollop of sour cream and serve easy Dinner Roll Knots on the side.

Your Menu: Serves 4 to 6

Curried Lentil Soup
Dinner Roll Knots

  • Fresh apple slices
  • Beer or Ice water with lime slices

Test Kitchen Tips:

The skin on fresh ginger is very thin and easily peeled by scraping with a spoon. Use a grater, fine shredder or to grate the ginger after peeling.

A medium sweet potato should weigh about 7 ounces.

Like to plan ahead? Freeze extra rolls or make a double batch and freeze for Thanksgiving dinner. Place in freezer containers and freeze until needed. Wrap in foil and reheat in a 350 degrees F. oven for 10 to 15 minutes.
