Test Kitchen Tips:

You can make these sandwiches even quicker and easier by quick-chilling the lobster mixture in the freezer for 20 minutes. You can also use an 8-ounce package of chunk-style imitation lobster in place of the lobster tails. (You may need to cut up the pieces of imitation lobster.)

Not a fan of lobster? Simply replace the lobster with 8 ounces of peeled and cooked shrimp.

Shopping List:

  • 2 8-ounce fresh or frozen lobster tails

  • 1 bunch celery

  • 1 lemon

  • 2 to 3 ounces pancetta or bacon

  • 4 6-inch pieces baguette-style French bread or 4 hoagie or brat buns

  • 1 head butterhead lettuce

  • 1 pint purchased deli coleslaw

  • 1 quart fat-free or lowfat milk
