Roasted Pork Tenderloin Menu (Serves 4)

For a change from ham or turkey, try this pork tenderloin meal for your holiday dinner.

  • Roasted Pork Tenderloin with Jamaican Snapdragons
  • Mashed sweet potatoes
  • Steamed snow peas
  • White Chocolate-Candy Cane Cheesecake
  • White wine, such as Pinot Grigio

 

Test Kitchen Tips: For mashed sweet potatoes, cook 1-1/2 pounds peeled, cut up sweet potatoes in lightly salted boiling water for 20 to 25 minutes or until very tender. Drain. Mash with a potato masher or electric mixer.

Mash or beat in 1/4 cup butter, 3 tablespoons packed brown sugar, 1/4 teaspoon ground cinnamon, and enough milk or half-and-half to make fluffy (2 to 4 tablespoons). Or, look for refrigerated mashed sweet potatoes in the refrigerator section of the grocery store.

Pork recipe easily doubles for a larger gathering.

  • 1 quart milk or 1 pint half-and-half
  • 8 ounces fresh snow peas
  • 1 bottle desired white wine

  • 10 ounces white baking chocolate or 1 package white baking pieces

  • 3-ounce package cream cheese
  • 8-ounce package mascarpone cheese
  • 1 dozen eggs
  • 1 package hard peppermint candies
