Make the croutons up to 1 day ahead and store in a covered container. Or, freeze up to 3 months.

Thaw frozen spinach quickly by placing in a medium microwave-safe bowl. Micro-cook, covered with waxed paper, on 100% power for 1 minute; stir with a fork to break up. Micro-cook for 1 to 2 minutes more, stirring every 30 seconds.

  • 4 14-ounce cans chicken broth (or, 1 49-ounce can)
  • 1 10-ounce package frozen chopped spinach
  • 1 9-ounce package frozen chopped cooked chicken
  • 1 pint half-and-half or light cream
  • 1 loaf sliced bread (optional)
  • 6 red and/or green apples
  • 6 bottles sparkling water
