Your Menu: Serves 4

Fruit-Crowned Belgian Waffles
Nut and Honey Crunch Granola

  • Desired-flavor yogurt
  • Poached eggs
  • Orange Juice
  • Coffee

 
Test Kitchen Tips:

For a fun presentation, layer the granola with the yogurt in parfait glasses. Serve with a long spoon.

To poach eggs, lightly grease a medium skillet with cooking oil or shortening. Add water to half-fill the skillet or pan. If desired, stir in 1 to 2 teaspoons instant chicken bouillon granules. Bring water to boiling; reduce heat to simmering (bubbles should begin to break the surface of the water).

Break 1 egg into a measuring cup. Carefully slide egg into simmering water, holding the lip of the cup as close to the water as possible. Repeat with remaining eggs, allowing each egg an equal amount of space. Simmer eggs, uncovered, for 3 to 5 minutes or until the whites are completely set and yolks begin to thicken but are not hard.

Remove eggs with a slotted spoon. Season to taste with salt and black pepper. If you have a poaching pan, lightly grease each cup of the pan with oil or shortening. Place poacher cups over the pan of boiling water (water should not touch bottoms of cups). Reduce heat to simmering. Break an egg into a measuring cup. Carefully slide egg into a poacher cup. Repeat with remaining eggs. Cover and cook for 4 to 6 minutes or until the whites are completely set and yolks begin to thicken but are not hard. Run a knife around edges to loosen eggs. Invert poacher cups to remove eggs.

If you have extra strawberries, for a special treat for mom, dip them in semisweet chocolate that has been melted with a little shortening (1 tablespoon for every 6 ounces chocolate). After dipping, allow them to stand at room temperature on a waxed paper-lined tray until set.

  • 1 lemon or lime (optional)
  • 1 8-ounce carton whipping cream
  • 4 6-ounce containers desired-flavor yogurt
  • 1 quart orange juice
  • ground coffee or coffee beans

  • 1 container regular rolled oats
  • 1 package whole almonds
  • 1 package pecan halves
  • 1 bottle honey
  • 1 package dried apricots
  • 1 package golden raisins
  • 1 package dried currants or raisins
