Foil-Wrapped Salmon and Vegetables
Five Spice Oven-Cooked Rice

Five spice powder can usually be found in the spice or Asian section of the grocery store. If you can't find it, here is a simple recipe:

In a blender combine 3 tablespoons ground cinnamon, 6 star anise or 2 teaspoons aniseeds, 1-1/2 teaspoons fennel seeds, 1-1/2 teaspoons whole Szechwan peppers or whole black peppercorns, and 3/4 teaspoon ground cloves. Cover and blend to a fine powder. Store in a tightly covered container. Makes about 1/3 cup.

  • 1 pound fresh or frozen skinless salmon, orange roughy, cod, flounder, or sea bass fillets, about 3/4-inch thick
  • 1 bottle minced garlic (or use garlic powder)
  • 1 lemon
  • 1 16-ounce package frozen whole green beans
  • 1 bag sliced almonds
  • 2 fresh mangoes or 1 jar refrigerated mango slices
  • 1 quart fat-free or lowfat milk

Pantry Items:

  • 1 14-ounce can chicken broth
  • 1 pound butter
  • 1 container five-spice powder
  • 1 package long grain rice
  • 1 bunch parsley
