This light and healthy soup combines a blend of crunchy vegetables with chicken and shrimp at only 152 calories per serving! Finish the meal with a fortune cookie and a steaming cup of green tea.

Your Menu: Serves 6 to 8

Asian Chicken and Shrimp Soup

  • Crisp rice crackers
  • Hot green tea
  • Purchased fortune cookies

 
Test Kitchen Tips:

For a quicker prep time for soup, use 2 skinless boneless chicken breast halves in place of the bone-in chicken breast halves. Cook only 12 to 15 minutes or until no longer pink.

Fortune cookies can be purchased in Oriental grocery stores or in the ethnic sections of some larger grocery stores.

Shopping List:

  • 2 small chicken breast halves (or 2 skinless, boneless chicken breast halves)
  • 3 14-ounce cans chicken broth
  • 1 bottle soy sauce
  • 8 ounces small shrimp in shells (or frozen peeled shrimp)
  • 8 ounces fresh bean sprouts
  • 1 head broccoli
  • 1 15-ounce jar straw mushrooms or 1, 8-ounce can mushrooms
  • 1 red or green sweet pepper (or 1 of each)
  • 1 bunch green onions
  • rice or other crackers
  • 1 package green tea bags
  • 1 package fortune cookies

Pantry Items:

  • black peppercorns or ground black pepper

Equipment Needed:

  • cutting board and knife
  • measuring cups and spoons
  • fine mesh sieve
  • pepper grinder
  • 4-quart Dutch oven with lid
  • wooden spoon
