Have plenty of iced tea ready--this spicy sauce and sassy salad will liven up those taste buds.

Your Menu: Serves 8

  • Sweet and Spicy Caribbean BBQ Sauce on Chicken
  • Grapefruit and Pickled Red Onion Salad
  • Brownies
  • Iced Tea

Test Kitchen Tips:

This sauce can be brushed on whole chicken or chicken pieces, pork or beef ribs, beef steaks, or pork chops or tenderloin. Make sure it is brushed on during the last 10 minutes so that it doesn't burn. For eight servings, you will need 2 whole broiler-fryer chickens, 2 pounds boneless beef or pork, or 6 to 8 pounds of ribs.

Prepare the spiced almonds for the salad ahead by place the cooled nuts in a storage container. Store at room temperature up to 3 days or in the freezer up to 1 month.

When using avocados, it is best to halve them first with the peel on, then remove the seed (it is easier to grip this way). Slice them just before adding to the salad, as they do start to brown once they are cut.

Purchase frosted brownies from your favorite bakery or prepare your favorite homemade recipe.
