Backyard Cookout Menu (Serves 6 )

Creole Carnival Burgers

  • Sliced tomatoes
  • Lettuce leaves
  • Sliced fresh peaches
  • Deli potato salad
  • Iced Tea or lemonade

Test Kitchen Tips:

Make sure you check doneness of the burgers with an instant-read thermometer. The internal color of the meat is not a reliable doneness indicator when cooking ground meat patties. Sometimes ground beef has lost its pink color before it reaches the safe internal temperature of 160° F.

Place cooked burgers on a clean plate, not the plate used for the raw patties -- this keeps the raw meat juices away from the cooked burgers.

If you prefer, you can prepare these burgers under the broiler. To broil, arrange patties on the unheated rack of a broiler pan. Broil 4 inches from the heat for 14 to 18 minutes or until done (160° F), turning once.

To make your own Cajun seasoning, combine 1/2 teaspoon white pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon ground red pepper, 1/2 teaspoon paprika and 1/2 teaspoon black pepper. (This recipe makes 1 tablespoon Cajun seasoning.)
