Rigatoni and Sweet Potato Menu (Serves 6)
Here's a meatless menu that's both easy and full of flavor. You can have it on the table in less than 30 minutes!
- Rigatoni with Spinach, Walnuts, Sweet Potatoes, and Goat Cheese
- Pineapple Slices
- Ice cream with caramel topping
- Fat-free or lowfat milk
Test Kitchen Tip: To keep your basil fresh and green, trim the stems, place the sprigs in a container with enough water for the stems to reach, cover with a plastic bag, and store on the counter. Trim the stems and change the water every few days. Wash and tear the leaves just before using.

- 12 ounces dried rigatoni pasta
- 1 pound butter
- 1 large sweet potato
- 1 red onion
- 1, 5-ounce package baby spinach
- 4 ounces goat cheese or feta cheese
- 1 package walnut pieces
- 1 bunch fresh basil
- 1 loaf Italian bread (optional)
- 1, 20-ounce can pineapple slices or 1 fresh peeled, cored pineapple
- 1 half-gallon vanilla ice cream
- 1, 10-ounce jar caramel ice cream topping
- 1 half-gallon fat-free or lowfat milk
