Rigatoni and Sweet Potato Menu (Serves 6)

Here's a meatless menu that's both easy and full of flavor. You can have it on the table in less than 30 minutes!

Rigatoni dinner

  • Rigatoni with Spinach, Walnuts, Sweet Potatoes, and Goat Cheese
  • Pineapple Slices
  • Ice cream with caramel topping
  • Fat-free or lowfat milk

Test Kitchen Tip: To keep your basil fresh and green, trim the stems, place the sprigs in a container with enough water for the stems to reach, cover with a plastic bag, and store on the counter. Trim the stems and change the water every few days. Wash and tear the leaves just before using.

 
Shopping List

  • 12 ounces dried rigatoni pasta
  • 1 pound butter
  • 1 large sweet potato
  • 1 red onion
  • 1, 5-ounce package baby spinach
  • 4 ounces goat cheese or feta cheese
  • 1 package walnut pieces
  • 1 bunch fresh basil
  • 1 loaf Italian bread (optional)
  • 1, 20-ounce can pineapple slices or 1 fresh peeled, cored pineapple
  • 1 half-gallon vanilla ice cream
  • 1, 10-ounce jar caramel ice cream topping
  • 1 half-gallon fat-free or lowfat milk

Pantry Items

  • extra-virgin olive oil
  • salt or kosher salt
  • ground black pepper

  • 5- to 6-quart Dutch oven
