Test Kitchen Tips:

You'll need 6 ears of fresh corn for the Roasted Corn Salsa (1/2 cup from each ear). To get the number of corn husks needed for the walleye, you can use the husks from these ears plus purchase 2 to 10 more, or you can purchase dried corn husks in the Hispanic food section of the grocery store, or at your local Hispanic market.

If peaches or nectarines feel very hard when lightly pressed, place them in a paper bag to ripen. Close the bag and place on the counter for a day or 2 or until they start to feel softer.

Use a cookie scoop or small ice cream scoop to drop the cookie dough onto the cookie sheets.

Shopping List:

For Walleye

  • 16 ears fresh corn (or 1 package dried corn husks)

  • 1 pound butter

  • 1 lemon or orange

  • 4 8-ounce skinless walleye pike fillets or other white fish fillets

  • 2 red and/or green sweet peppers

  • 1 bunch green onions

  • 1 bunch parsley

  • 1 bulb fresh garlic

  • 2 limes

  • 4 fresh peaches or nectarines

  • tea bags

For Cookies

  • 1 pound butter (also in above list)

  • 1 dozen eggs

  • 1 container quick-cooking rolled oats

  • 1 6-ounce package semisweet chocolate pieces

  • 1 10-ounce package peanut butter-flavored pieces
