Browned-Butter Fish Menu
Skate is kite-shaped fish, whose fins are its edible portion. If skate is not available at your local fish market, you can substitute a more common white-fleshed fish such as flounder, orange roughy, catfish or tilapia.

Fresh lemon juice enhances the flavor of many fish dishes. Serve fresh lemon wedges with fish and let people add lemon to their suit their taste.
Cook tiny new potatoes, halved, in enough boiling salted water, covered, for 10 to 12 minutes or until tender. Add fresh, trimmed green beans the last 7 minutes of cooking. Drain. Toss with butter and season with salt and pepper.
You may be able to purchase whole green beans already trimmed from the produce section of your grocery store. Or, you can buy frozen whole green beans. Add them to the water for the time indicated on the package.

- 1 to 1-1/2 pounds skate wing, flounder filets, orange roughy, catfish or tilapia fillets, 1/2- to 1-inch thick
- 1 pound butter
- 1 jar capers
- 1 bottle sherry vinegar
- 1 bunch fresh parsley
- 12 to 16 ounces tiny new potatoes
- 12 ounces fresh green beans
- 1 lemon
