We've seen a lot of dips through the years, but we've never forgotten this one -- juicy veggies, tangy olive tapenade and feta piled on a thick layer of hummus. We like to make it ahead and serve it with warm toasted pita wedges. Originally published: December 2005.

Fiesta Dip

For an appetizer in minutes, Wendy Porterfield of the Washington House Inn in Cedarburg, Wisconsin, bakes her cheesy dip for 10 minutes, stirs, then spoons it into pre-baked phyllo shells. Then, she bakes the shells 5 to 10 minutes more. "The phyllo cup version makes a great appetizer for a more formal party, where the dip version is great for a crowd," she says.

Sweet and Spicy Caribbean BBQ Sauce

Cookbook author Nina Swan-Kohler created this sauce to remind her of the Caribbean flavors she enjoyed while living in Trinidad and Tobago after college. Brush the sauce -- a combination of honey, chili sauce and spices -- on beef, chicken or pork.

Chunky Fresh Tomato Salsa

"A very good fresh tomato salsa is within everyone's reach," says Chicago chef Rick Bayless. He developed this recipe for people who aren't knife wizards. It uses a food processor for the garlic, green chile, cilantro and half the tomatoes. "Green onions are the easiest to cut," he says, "but feel free to use white or red onion if that's what's available or appealing."
