Simple Chicken & Shrimp Dinner
This simple menu of delicious chicken and shrimp served over a bed of Spanish rice has something for everyone. Cool things off with fresh kiwi and peach sorbet for dessert.

Spanish Rice with Chicken and Shrimp
- Sliced, peeled kiwi fruit
- Mango or peach sorbet
- Iced tea or milk
Test Kitchen Tips:
For even quicker rice, substitute 2 8.8-ounce pouches cooked Spanish Style Rice for the pilaf mix. Just heat in the microwave according to package directions.
To save time, purchase shrimp from your grocery store's meat department already peeled and deveined.

- 1 6 3/4-ounce package Spanish rice pilaf mix or 1 6.8-ounce package Spanish-flavored rice-and-vermicelli mix (or 2 8.8-ounce pouches cooked Spanish Style Rice)
- 8 ounces skinless, boneless chicken breast halves
- 1 green sweet pepper
- 1 red onion
- 1 14 1/2-ounce can whole or diced tomatoes
- 1 bottle dry white wine or 1, 14-ounce can chicken broth
- 1 bulb garlic
- 8 ounces fresh or frozen peeled and deveined large shrimp
- 1 10-ounce package frozen peas
- 1 4- to 4 1/2-ounce can diced green chili peppers
- 4 kiwi fruit
- 1 pint mango or peach sorbet
- tea bags or 1 quart milk
