Test Kitchen Tip: To split the Cornish game hens, use kitchen scissors to cut the bird lengthwise in half through the breast and back bones.

  • 3 1-1/4 to 1-1/2-pound Cornish game hens
  • 1 package walnut pieces
  • 1 6-ounce package long-grain-and-wild-rice mix
  • 1 bunch celery
  • 1 onion
  • 1 pound butter
  • 1 package pecan pieces
  • 1 package raisins
  • 1 8-ounce package sliced bacon
  • 2 medium yellow summer squash
  • 2 medium zucchini
  • 1 red onion
  • 1 bottle dry white wine (such as Chardonnay or Chablis)
  • 1 package finely shredded Parmesan cheese (optional)
  • 6 oranges
  • bottle honey
  • 1 package fresh mint
  • 1 half-gallon fat-free or lowfat milk
