Citrus Chicken Menu
Orange and grapefruit sections add a refreshing burst of flavor to each bite of this tangy dish. Drizzle tender chicken breasts with a thickened orange liqueur sauce and top with maraschino cherries.

Dazzling Citrus Chicken

Test Kitchen Tips:
When sectioning citrus, use a sharp knife with a thin blade to remove the peel, exposing the fruit. (The white pith is bitter, so you want to remove all of that as you trim the fruit.) Use the knife to work between each side of the membrane and the fruit to remove the fruit sections. Work over a bowl to catch any juice and use this juice in the recipe.
Pounding chicken breasts to an even thickness allows the chicken to cook quickly and it only takes a few minutes. Place chicken between sheets of plastic wrap and pound with the flat side of a meat mallet until the chicken is about 1/4 inch thick.
Steam broccoli in a steamer basket placed in a saucepan that contains a small amount of water. Bring water to boiling. Reduce heat and cover pan to steam the broccoli for 8 minutes or until crisp-tender.
Dress up the scoops of chocolate ice cream with crumbled purchased brownies, crushed or chopped candy bars and chocolate or caramel ice cream topping.
