Baked chicken marinated with wine, balsamic vinegar, tarragon, and lemon peel gives this meal a unique and refreshing summer flavor. Serve over a bed of fresh lettuce with crusty French bread on the side. For dessert, fresh summer berries take center stage in this bake-ahead Triple-Berry Cinnamon Bread Pudding topped with whipped cream.

Your Menu: Serves 4

Balsamic Chicken Salad
Crusty French or Italian bread
Triple-Berry Cinnamon Bread Pudding
Chardonnay or iced tea

 
Test Kitchen Tips:

Use a Microplane® fine shredding tool to remove lemon peel for salad. You can find them at specialty kitchen shops. Just remove the yellow part of the peel, as the white pith underneath will add bitterness.

Cans of food make good weights for the bread pudding. Extra bread puddings will hold in the refrigerator up to 2 days.

Shopping List for: Salad

  • 4 medium skinless, boneless chicken breast halves
  • 1 bottle dry white wine, such as Chardonnay, or chicken broth
  • 1 box raisins
  • 1 bottle balsamic vinegar
  • 1 package fresh tarragon or 1 container dried tarragon
  • 1 lemon
  • 1 head desired lettuce
  • 1 loaf crusty French or Italian bread
  • tea bags, if brewing iced tea

Pantry Items:

  • coarse or regular salt
  • black peppercorns
  • olive oil

  • 1 quart strawberries
  • 1 pint blackberries
  • 1/2 pint blueberries
  • 1 lemon
  • 1 long loaf cinnamon or raisin bread
  • 1 8-ounce container frozen light whipped dessert topping (optional)
