Test Kitchen Tips:
Tangerines for the mousse should be available in your supermarket's produce section from November until April. If you can't find tangerines, substitute orange peel and purchased tangerine juice (or prepare juice from concentrate).

- 4 ounces Gruyere or Swiss cheese
- 1 pint half-and-half or light cream
- 1 bunch fresh parsley
- 1 bag salad greens
