Andouille (an-DOO-ee) sausage is a spicy, smoked sausage that is used in Cajun cooking. If it is not available where you shop, you can use your favorite smoked sausage links.

- 3 medium round red potatoes (1 pound), thin sliced
- 1 red or green sweet pepper
- 1 onion
- 1 pound smoked andouille or sausage links
- 1 10-ounce package frozen whole kernel corn
