Test Kitchen Tips and Timesavers:
For 6 to 8 servings of roast beef, start with a 2 to 3 pound beef eye round roast. Roast on the rack of a shallow roasting pan in a 325 degree F oven for 1 1/2 to 1 3/4 hours or until a meat thermometer registers 135 degree F. Cover and let stand for 15 minutes (the meat's temperature will rise to 145 degree F or medium-rare during standing).
Bake rolls during the roast's standing time.
Cook green beans in lightly salted water for 10 to 15 minutes or until crisp-tender.
Store extra rolls in a covered container at room temperature up to 3 days or store, covered, in the freezer up to 3 months. Wrap in foil and reheat in a 350 degree F oven for 10 to 15 minutes.
