Be sure to prepare the dessert before you bake the chops. (The dessert can be made up to 1 day ahead of time.)
To steam pea pods, place in a steamer basket set in a large saucepan with boiling water that comes just below the bottom of the basket. Cover and steam for 1 to 2 minutes or until crisp-tender. Season with salt and pepper.
To add interest to your mashed potatoes, stir in snipped fresh chives or bottled minced roasted garlic.
