Test Kitchen Tips:
To steam broccoli spears, wash and remove outer leaves and tough parts of stalks. Cut lengthwise into spears. Place a steamer basket in a large saucepan or skillet. Add water to just below the basket. Bring just to boiling; reduce heat to maintain a gently boil. Add broccoli to basket. Cover and steam for 8 to 10 minutes. If desired toss with butter, a little lemon juice and cracked black pepper.
