Your Menu: Serves 8

London Broil with Marsala Sauce

  • Steamed broccoli spears
  • Hot cooked rice

Luscious Cranberry-Chocolate Cake

  • Pinot Noir or favorite red wine

 
Test Kitchen Tips:

To steam broccoli spears, wash and remove outer leaves and tough parts of stalks. Cut lengthwise into spears. Place a steamer basket in a large saucepan or skillet. Add water to just below the basket. Bring just to boiling; reduce heat to maintain a gently boil. Add broccoli to basket. Cover and steam for 8 to 10 minutes. If desired toss with butter, a little lemon juice and cracked black pepper.

  • 2 1 1/4-pound beef flank steaks
  • 1 bottle teriyaki sauce
  • 2 small cans pineapple juice
  • 1 onion
  • 1 bottle minced garlic
  • 1 package fresh button mushrooms
  • 1 bottle dry Marsala wine
  • 1 14-ounce can beef broth
  • 1 15-ounce can tomato puree
  • 1 1.2-ounce package demi-glace sauce mix
  • 1 head broccoli
  • 1 package uncooked long grain rice
  • 1 bottle Pinot Noir or favorite red wine

  • 1 pound unsalted butter
  • 1 package cake flour
  • 1 can unsweetened cocoa powder
  • 1 dozen eggs
  • 1 quart buttermilk
  • ground coffee
  • 1 package dried cranberries or dried tart cherries
  • 1 jar cranberry or red currant jelly or lingonberry or seedless raspberry jam
  • 1 8-ounce package semisweet chocolate squares
  • 1 8-ounce package unsweetened chocolate squares
  • 1 carton refrigerated egg product
  • 1 jar instant espresso coffee powder or instant coffee crystals
  • 1 bottle cognac, orange liqueur, Kirsch, cherry brandy, creme de cassis (or use water)
